President's Report:
From the Mind of Martha


"Of all the events in the course of a human life, a wedding may be the richest - in fact, in folklore, in spirit.  By almost any measure - the dreams extended, the planning, the paraphernalia, even the quality of tears shed - it emerges as monumental.  It is curious to think that the wedding ceremony lasts somewhere between four and sixty minutes, its celebration between one and six hours, and yet its preparation consumes months, if not years, of frantic time; that for all the careful choreography of dresses, flowers, cakes, singing strings, special shoes, lace garters, calligraphy pens, Jordan almonds, rose petals, items borrowed and blue, what remains behind is a dress, a folio of photographs, and memories.  Memories so strong, so well preserved in mind's eye and imagination that thirty-five years later, the scent of roses blooming or the sound of a harp playing with evoke the full-blown scene.

In spirit, the wedding experience begins in childhood,when weddings register as the most magical, most fanciful events conceivable; in wide and dancing young eyes, one can read that all the costumery, pageantry, and tangible joy appear as extraordinary excursions into the realm of storybooks and fairy tales.  In America, and in most countries in the world, bride and groom grow up nurtured by wedding lore, bride dolls, play houses, the romantic sagas of literature, film, and news coverage, even the old "Bride and Groom Show" and the new "Newlywed Game."  From changing vantage points, a wedding is anticipated.  "I want to be married in the woods by a raccoon minister," a young boy announced to me recently.  "I want a top hat and James Taylor," a slightly older brother declared.  By the time they are eighteen, most girls have a gauzy image in their head of their wedding dress, their weddign site, their wedding day, based on the most personal fancies.  Years later, in middle and old age, they have relived the wedding day countless times, revived it in part with anniversaries, and passed on its stories and mementos to other generations. 

A wedding is many things.  Foremost, it is a rite of passage, an end and a beginning, a fulfillment and a promise.  It is one of the three watershed events in the life of man and, in the company of birth and death, the only one that is voluntary, premeditated, undertaken in full consciousness."

Member Spotlight:

Joe Bunn DJ Company is one of the largest and most referred DJ Agencies in the Southeast.  Their staff of 20 DJ's takes pride in professionalism and customer service.  Weddings are their specialty!  Their newest services also include videography and photo booth rentals. 

The company is an award winner with The Knot, Wedding Wire, and other online sites.  In 2004, Joe founded the TDJA, Triangle DJ Association, that brings together the area's best DJ's for the purpose of education, networking, and raising the level of standards for pro DJ's.

Post Meeting Announcement:
The March Triangle NACE meeting was undeniably more than just a meeting . . . it was the combination of many members who united and gave to help make a dream come true. While planning the event at The Sutherland Estate and Gardens in Wake Forest, NC, the idea was suggested of finding a couple who were planning on getting married, but who needed a helping hand, and offering to them to actually "tie the knot" at our meeting. Although time was limited, just such a couple was found and a flurry of activity began. The result was a beautiful wedding that took place for Josh and Christina McMinnis. The event began on the beautiful grounds of The Sutherland with passed hors d’oeuvres, including Golden Phyllo purses of Zucchini Basil with Feta; Brie and Walnut Tartlets topped with Fuji Apple Chutney; Beef Carpaccio and Arugula Rollups with Minted mustard; and Blackberry BBQ Duck Ruffles, accompanied by a selection of cocktails. Mitchell’s Catering did an outstanding job with not only the food for this event, but their Pastry Chef also created a beautiful wedding cake for the couple as well. After cocktails and networking time, NACE members and guests of the bride and groom were seated for the touching ceremony conducted by Ed and Becky Sansbury. Everything for the couple was graciously provided by many NACE members, including the wedding dress, jewelry, tuxes, outfits for their two children, flowers, photography, food, alcohol, the wedding cake, and much more. Following the ceremony, attendees moved into dinner, which featured station style offerings of Blowtorch Salmon, a Rotisserie Carving Station, Low Country Shrimp and Sausage Gumbo, and an Asian Noodle Bar. The educational component of the meeting focused on wedding trends as presented by Scott Garland from The Inn at Biltmore in Asheville, and Todd Crawford of Crawford and Company Florist of Charlotte.  They shared with us the current and new trends they are seeing, giving us many new ideas to consider. Josh and Christina were then presented, and made their entrance into the “reception” to share a first dance and then moved to cut the wedding cake. That was followed by dancing to the sounds of music played by Joe Bunn. The event was covered by various media outlets, including stories that aired on WRAL TV, and on NBC 17.

PURPOSE OF THE POSITION:
Department leader who fosters a sales culture of driving revenues and maximizing property revenues. Strong focus on selling skills and a sense of customer urgency that meets the goals of the organization and surpasses customer expectations. Directs the day-to-day Catering department to achieve the property mission and revenue and service goals. Meets or exceeds department budgeted revenues, booking pace, and forecasting accuracy.

BASIC JOB FUNCTIONS:
• Guides department in the creation of a marketing plan and its deployment to discover new business opportunities in the social and corporate catering community. Develops tactics to find new customers and retain them. This includes tangible efforts in prospecting, sales calls, entertainment, and site inspections.
• Utilizes the tools of sales productivity reports, post-event surveys and letters, daily banquet event orders/pricing, set-up reports, manages night reports, to measure the effectiveness of training.
• Leader of Catering Sales with assigned markets, and insures both quantity and quality of sales and execution is commensurate with leadership.
• Ensures each member of the department executes all four business cycles (sales, pre-planning, execution, and post-event) at or above standard.

The Irregardless Café Catering service seeks a Catering Operations Manager who is a self-motivated, high energy, detail oriented and goal driven individual who is experienced in ‘on’ and ‘off-site’ catering.  This is an ideal position for a quick learner with good social skills. The Irregardless Café & Catering is a growing catering business.
 
Successful candidates will have prior experience in Catering and Restaurant Food Service. They will also have
Knowledge of the planning and hands-on execution of on & off site catering;
Experience with catering and event sales;
Skills hiring, training and managing catering staff;
Effective office skills management, to include proposal  preparation, financial accountability, and record management;
Ability to network with clientele, as well as establish relationships with vendors.
 
Compensation will include hourly wages and different pay levels, depending on the work, as well as bonuses. During this current economic downturn, there will be the option to supplement hours with work within the Irregardless Café.
