President's Report:

Hello NACE member's and friends of NACE

The Triangle NACE Chapter board has  already hit the ground running for 2008.  Starting out the year with a wonderful event at Rigsbee Hall is just the beginning.  The NACE Board just sent 5 members to the regional conference in Atlanta and will also be holding their board retreat at the Aqueduct Conference center over  February 3rd and 4th.  It is at this time your board will be sharpening their saws to bring only the best of NACE to it's members.

Triangle NACE  already celebrated many successes over the past year and has a great outlook for 2008.  We are now 133 members strong and growing.  The board is committed to providing all of its members service excellence.  Bringing you the latest trends in catering, design, decor and the educational component that you can build upon  and place in your own tool box.

How do you get the most out of your NACE Chapter membership!  Get involved, join a committee,  assist at the Chapter meetings.  We have several options open and  we would be happy to assist you to find the right fit for you.

Member Spotlight:

February's member spotlight is Lenny Fritts with Touch of Class DJ!

Choosing the right Raleigh wedding DJ and MC will make all the difference!

What a great feeling to know you've finally fallen in love with "the one" and you're finally planning your wedding. He has finally proposed and now you have to get to the phone to call Mom and other family members. You've waited for this day and now that it's arrived, what do you do next?

First, of course, you have to set a date. Once you have the date set, you will need a location for the ceremony and then the reception. Next you will need to decide on your entertainment, since it can make or break the whole event. Will you need a harpist, string quartet, or will a DJ provide the music for your ceremony as well as your reception.

Lenny Fritts' Touch of Class DJs will and can provide music for both. We will also help you find and choose the music for the wedding ceremony and then the music for your wedding reception. We've performed at thousands of weddings, making each one special and unique for each couple.

With our Ceremony / Reception Planner which is online, we will help you plan and coordinate the whole day. The only thing that we want you to worry about is walking down the isle, since we will handle the rest for you.

National Conference Scholarship Applications:

 Hello Chapter members.

Your NACE Board has some exciting news to share with all of our chapter members.  Each year we have been dedicated to awarding two scholarships for our National Educational Conference.  This year we have been able to increase that opportunity to four scholarships to attend the National conference.  This year the conference will be held in Philadelphia during the dates of August 3rd - the 7th.   

  Scholarship Applications will be e-mailed  to entire chapter membership by March 3rd.

"The Prime Aphrodisiacs of 1705’s Networking"

As we all know, February is the month to celebrate romance and love, so we found it only appropriate to focus our Chapter meeting on this subject. Meeting at one of Raleigh’s newest and chicest restaurants, 1705 Prime Steakhouse, NACE members and guests networked endlessly while listening to a smooth, hip jazz trio.

 

Before the indulging began, the 2008 Triangle NACE Board members met exclusively with new members to welcome them to our Chapter. Given this opportunity our Board graciously embraced our "newbies" and introduced them into a social and professional organization that truly wishes the success of each individual in the catering profession.

 

As the clock struck 6 o’clock, members and guests of all fashion began to arrive. 1705 Prime designed an atmosphere of pure romance with dimmed lighting, candles, amorous music and of course champagne! During the first portion of the meeting, people mixed and mingled with cocktails and passed hors d’oeurves all deliberately created with a flair of passion. Aphrodisiacs graced every single culinary design this evening, featuring lobster profiteroles to champagne with a pomegranate infusion.

 

After a brief period of networking, Diane Tighe romanced the guests with a brief welcome, enticing everyone to embrace the relaxing atmosphere and enjoy! Mary Martha Hubner gave a description of the intimate history of aphrodisiacs and how they were incorporated within the program. But the educational component for this evening was truly action oriented with tips and hints on each table that described how to "woo" your clients, colleagues and employees through the proper etiquette practices, aphrodisiacs to professional service hints. Also, Kimberly Love from The Umstead Hotel and Spa spoke briefly on "out of the box" techniques to woo your client using spa services and relaxation methods.

 

Lynn Graves from Fresh Affairs was the affiliate spotlight during the meeting. He graciously designed a table highlighting his talents with gorgeous floral arrangements that only enhanced the evening’s theme.

 

Tonight’s theme was to capture the art of relationships, romance and relaxation. This was definitely achieved by "wooing" all our guests with intense networking, culinary delights and of course a delightful atmosphere!

PURPOSE OF THE POSITION:
Department leader who fosters a sales culture of driving revenues and maximizing property revenues. Strong focus on selling skills and a sense of customer urgency that meets the goals of the organization and surpasses customer expectations. Directs the day-to-day Catering department to achieve the property mission and revenue and service goals. Meets or exceeds department budgeted revenues, booking pace, and forecasting accuracy.

BASIC JOB FUNCTIONS:
• Guides department in the creation of a marketing plan and its deployment to discover new business opportunities in the social and corporate catering community. Develops tactics to find new customers and retain them. This includes tangible efforts in prospecting, sales calls, entertainment, and site inspections.
• Utilizes the tools of sales productivity reports, post-event surveys and letters, daily banquet event orders/pricing, set-up reports, manages night reports, to measure the effectiveness of training.
• Leader of Catering Sales with assigned markets, and insures both quantity and quality of sales and execution is commensurate with leadership.
• Ensures each member of the department executes all four business cycles (sales, pre-planning, execution, and post-event) at or above standard.

The Irregardless Café Catering service seeks a Catering Operations Manager who is a self-motivated, high energy, detail oriented and goal driven individual who is experienced in ‘on’ and ‘off-site’ catering.  This is an ideal position for a quick learner with good social skills. The Irregardless Café & Catering is a growing catering business.
 
Successful candidates will have prior experience in Catering and Restaurant Food Service. They will also have
Knowledge of the planning and hands-on execution of on & off site catering;
Experience with catering and event sales;
Skills hiring, training and managing catering staff;
Effective office skills management, to include proposal  preparation, financial accountability, and record management;
Ability to network with clientele, as well as establish relationships with vendors.
 
Compensation will include hourly wages and different pay levels, depending on the work, as well as bonuses. During this current economic downturn, there will be the option to supplement hours with work within the Irregardless Café.
